So whats the difference between a hobart 180 and a lincoln 175? Or the Lincoln 200 and Hobart 210? Obviously the hobart has a higher output but is it a difference in duty cycle? Stability?

Look at the specs on each, should be able to answer your questions.

Don't know exactly, but I can tell you the difference between the Hobart and Miller (Miller > Lincoln).

Hobart's made by Miller. The Millers have a better power supply and metal rollers where the Hobarts have plastic. The Hobart also only has a 4 position switch for wire voltage, where the Lincolns and Millers have variable.

The Hobart isn't designed to be used 40 hours a day, 7 days a week. But for the price difference and fabbing of a few rigs, it's perfect. Besides, if parts fail, ALL of the Miller parts fit, and you can end up with a Miller in a Hobart casing anyway ;)

Hell... Even the gun says Miller on it...
